Skillet Baked Buffalo Chicken Casserole
3 oz Chicken Breast
300g Riced Cauliflower
3/4 Cup Diced Mirepoix (Diced Carrots, Celery, Onion)
1 oz Fat free Shredded Mozzarella Cheese
1 Tbsp. Grated Parmesan Cheese
2 Egg Whites
1. Preheat oven to 400 degrees.
2. Sauté mirepoix over stovetop until lightly browned.
3. Stir in riced cauliflower, cooked shredded chicken and spices.
4. Spray a skillet with PAM, then pour in mirepoix/cauliflower mixture.
5. Add in egg whites, and mozzarella cheese and stir until mixed.
6. Top with oregano, parsley, and grated parmesan cheese.
7. Bake In oven 10 min or until lightly browned, and egg whites are thoroughly cooked.
